Texas Caviar

My mom made this bean dip for our Christmas party and it was amazing! Someone she knew forwarded this recipe to her and I'm glad she did!  It's really easy to make and relatively quick to put together.

What you'll need for the mix...
- 1 can black beans, drained & rinsed
- 1 can black eyed peas, drained & rinsed
- 1 cup of fresh/frozen corn
- 1 med jar of jalapeños
- 1 med jar of Spanish olives
- 1 med red onion
- A few stalks of celery

What you'll need for the marinade...
- 1/2 cup of apple cider vinegar
- 1/2 cup of sugar
- 1/4 cup of olive oil
- 1/4 cup of veggie oil

Ingredience

Steps:
1. Bring the marinade to a boil, cook until sugar is dissolved
2. Hear & let cool
3. While boiling chop up the jalapeños, Spanish olives, onions & celery
4. Add all of the ingredients to a bowl
5. Pour marinade over the top and refrigerate overnight

Five steps & that's all! See it is that easy.
